Mini Ham and Cheese Frittatas

I love easy breakfasts, I’m a huge fan of the prepackaged breakfast sandwiches by Smart Ones but I’m really trying to avoid eating as much chemicals as possible which those things are loaded with. I’m not a big fan of cereal either so I decided to look for a recipe for frittatas that I could freeze myself and reheat in the mornings for a healthy and easy breakfast choice. I found this recipe awhile back in cooking light and I finally tested it out!!!


  • Cooking spray
  • 1/2 cup finely chopped onion
  • 2/3 cup chopped reduced-fat ham (about 2 ounces)
  • 1/3 cup (about 1 1/2 ounces) shredded reduced-fat extra-sharp cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon black pepper
  • 4 large egg whites
  • 1 large egg


  1. Preheat oven to 350°.
  2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion; sauté 2 minutes or until crisp-tender. Add ham; sauté 3 minutes. Remove from heat; cool 5 minutes. Combine remaining ingredients in a large bowl; stir with a whisk. Add ham mixture, stirring with a whisk. Spoon mixture into 24 miniature muffin cups coated with cooking spray. Bake at 350° for 20 minutes or until set.

While this recipe is not chemical free, the cooking spray I’m sure is not healthy for you at all but it’s definitely healthier than the prepackaged stuff. This recipe is very easy to make and has alot of flavor. I tweaked the recipe a tad because I didn’t have all the exact ingredients so instead of cheddar cheese i used leftover mexican 3 cheese blend from one of my taco nights. I didn’t have dried thyme so i used dried Italian Seasoning that has some of it in it along with oregano and basil. The recipe does not need salt because of the ham so do NOT add it! Unless you do a veggie version which I’m thinking of doing next time, maybe a curried mushroom and kale frittata? sounds yummy to me. These are perfectly bite sized and are really really good. The hard part is not eating them all in one sitting! Hope you guys enjoy this recipe

Ok so now you know all about Cook’n and DVO I can let you guys know my thoughts and favorite features etc. First off I’m just going to be honest and say I have not found one thing to say as a con, and I have been trying to find one. The thing I like most about this software is how easily I can now locate my recipes! I really like that i can put all my pinterest recipes in Cook’n and I can download recipes from websites like the Food Network. It makes recipes so much more accessible to me and I’ve noticed that I’ve actually been cooking more and trying out more recipes then I normally would. My absolute favorite feature of cook’n is that it calculates the nutritional value of your meals which makes counting calories so much easier! Now most women are on or have been on a diet in there life and counting calories is harder when cooking from scratch which is of course the healthiest way to cook 🙂 I’m on weight watchers so for the longest time if I couldn’t figure out the calories fat and fiber in a meal then i wouldn’t eat it which made cooking boring!!! Who wants to cook the same things over and over :/ I have been having wayyy more fun in the kitchen and I highly recommend Cook’n I’ve already told so many people how awesome it is. And I’ve only had it for like 4 days!! If you like to cook then you will LOVE this!!!

Beauty Balms…Secrets Revealed!


Hey Everyone, I have been making these ‘Beauty Balms’ as I’ve dubbed them for like 6 months and everyone seems to love them and I always get asked the same question. “How do you do it?” I do it because I’m awesome, duh! But you guys can be just as awesome as me. So I’ve decided that I’ve kept it a secret for long enough! I’m not very good at keeping my own secrets anyhow so why hold off when I will undoubtedly spill the beans.

Ok so here are most of the things you will need


You will need a lip balm of some sort, I prefer EOS lip balms because they are organic and have several flavors all of which have no color or tint. But any lip balm will do. The little bow next to the  EOS is actually an earring, earrings are the perfect size for the top. Next to the bow there are lavender flat back pearls and purple flat back rhinestones both in size 4mm. Avoid everything labeled Hot Fix, Iron On, or Self Adhesive. The long stick underneath everything I call a pick up stick but sadly I don’t know what it’s actually called. But it’s on the same aisle in Joann’s that the rhinestones are on. One item I did not list is Craft Glue you can go to any craft store and pick up a crafting glue, just make sure that it is clear and is meant for these types of surfaces. If its meant for fabrics it clearly won’t work here you’ll want one that works on metal and plastic surfaces.

Ok so now that you have your supplies we can start making our Beauty Balms!!!

Step One: Prepare

Ok so you want all your items easily accessible I lay everything out on a crafting towel which is really just a regular towel that I dripped glue on one day. I’m clumsy so its not a big shocker. I also like to take about 10 Q-tips and cut one end off, I use this as my glue spreader because its such a small tip that I can get glue to go exactly where I want it rather than everywhere making my balm look like a hot mess.

Step Two: Glue

So the method that works best for me is squeezing glue onto the plastic q-tip. Then going around the EOS seam, where you would twist the lid off, in a circle I make my way about 1/3 of the way around then recap my glue. If you don’t recap your glue it’ll make the process way harder than it needs to be because the glue in the applicator tip will harden and you’ll have to clean the tip out. Not fun

Step Three: Placement

Then using your pick up tool you’ll place each rhinestone in the wet glue, you can create patterns but this does make it a little harder. Feel free to unleash your creative side.

Step Four: The Topper

For the ‘centerpiece’ I have found that earrings are the best thing to work with.


You can take for example this purple ribbon earring and using a set of wire cutters you can clip the post off (the metal that goes through your ear). After that you will still have a nub of metal to take off and what i do is take a regular 12V drill and use a grinding stone bit the one i use is a Dremel bit ($4 bucks from home depot) but it works on my Black and Decker drill. All you want to do is grind the nub down until it can lay flat or flat-ish on the top of the balm.


Once its ready you put down a generous amount of glue where you want it and squish it down in place then you can work on laying the pearls and rhinestones down in whatever pattern you have come up with.

Once you are done you will want to allow it to dry for about a day depending on your glue I leave mine to dry on a flat surface in my garage away from children and adults who like to drop things.



The finished product! These are fun because you can give them as gifts or use them yourself and you will get TONS of compliments on them when you go to moisturize your lips! Have fun crafting

New Year New Resolutions!

So last year was not my favorite year but I know that 2014 is going to be a pivotal year for me. So I have a HUGE list of New Years Resolutions I’m not going to list them ALL because that would be crazy but I will share my TOP FIVE NEW YEARS RESOLUTIONS FOR 2014!

1. Self Confidence- I’ve never really had any of this but I’ve heard its pretty nice haha so my number one goal is to build my self confidence!

2. Weight Loss- I’ve lost 25lbs and i want to continue to lose even more!

3. Start my new career as a Medical coder-this is a biggie. I have to finish school and get certified but Its gonna happen!

4. Get my own apartment! – I hate not having my own place and oh how i miss my old apartment filled with all my crummy furniture but at least it was ALL MINE!

5. Get Married- Well maybe not I just want to find a good man who I enjoy being around :’)

Weight Loss Update

Hey guys! So i figured i would give an update on my weight loss. Since May i have lost 25 pounds, which does not sound like a huge accomplishment but i am a VERY happy lady right now considering i haven’t gained any weight. Well i gained 5 pounds in December because of all the desserts so technically i lost 30 then gained 5 😦 But 5 pounds ain’t bad in my book and ill lose them so I’m very optimistic on the new year and New weight loss goals.
